We have been feasting on Asparagus all week. The cold weather had delayed the crop a little from New Cross Farm in East Lambrook, but it was so worth the wait - delicate, delicious and dripping with butter, yum.
We are now cooking with asparagus as well as eating it Look out for our new seasonal dishes including asparagus lasagne, risotto, roulade & tarts which are now on our seasonal menu.
We have also been experimenting with different oils in our cooking. By far the best has been a Rapeseed oil from a family run farm in Suffolk
It has worked beautifully; the oil is very similar to olive oil but contains a significantly greater percentage of omegas 3,6 & 9. It also has a much lower percentage of saturated fat, 6% as compared to 14% in most olive oils. As it is so much healthier we will be using it regularly in our dishes; and, as it's from Suffolk rather than, say, Italy for example, Italy, there are less food miles involved too.

We have also been trying out some new packaging, thanks to one of our customers who sent us a newspaper clipping about a firm near Wrexham.
The company is developing insulated products for the frozen food producers using cardboard rather than polystyrene and has had some good feedback from their existing clients.
Although our current packaging is fully recyclable (where the local authorities have the facilities); we would prefer to be using a product that is more widely accepted for recycling and more sustainable in it's production.
